I've been looking for low calorie muffins using regular flour. All the low calorie recipes use whole wheat.

Low-Cal Banana Muffins Recipe

Ingredients
1cup all-purpose flour
1tablespoon baking powder
1/2teaspoon baking soda
1/8teaspoon kosher salt
1cup bananas, mashed
1/4cup sugar
1/4cup applesauce
1egg
1/2teaspoon vanilla extract

Directions 1.Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

2.Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.

3.Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving. For best flavor, place in an airtight container or bag overnight.

I used to have an awesome one and I have lost it. All I remember is the honey, wholewheat flour and bran -wheat AND oat (no sugar). Anyone got a good bran muffin recipe that is low in calories for someone who is trying to lose weight

Applesauce Carrot Cake
(makes 16 servings)

Ingredients:



2 cups white flour

2/3 cup sugar

2 teaspoons baking soda

1 1/2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

3/4 cup unsweetened applesauce

1/4 cup vegetable oil

3 large eggs

3 cups carrots, coarsely chopped



Directions:



1. In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and salt.

2. In a separate small bowl, combine the applesauce, oil and eggs. Add to the flour mixture, stirring until the ingredients are well blended. Add the carrots and mix again.

3. Pour the batter into a greased 9" tube pan, or use a 9" x 13" rectangular cake pan, or two bread loaf pans, or a cupcake pan.

4. Bake the cake in a preheated 350 deg. oven for about 1 hour, 10 minutes, or until a toothpick inserted in the thickest part of hte cake comes out clean. Set the cake on a wire rack for five minutes. Then, run a knife around the edges of the pan to loosen the cake, and turn the cake out onto the rack to cool.

I'm going to make chocolate chip muffins and I've looked all over the internet for a low calorie recipe and I can't find anything. So can anyone give me a low calorie recipe (prefferably without Splenda or other sweeteners) for chocolate chip muffins? Thanks!
